Since coconut has been found to be so healthy for us
1/2 c melted butter
6 packets True Lemon
1 1/2 c sugar
1/2 c butter
3 eggs at room temp.
2 egg yolks at room temp.
1. Toast coconut and mix with melted butter, allow to cool.
2. Press coconut mixture into pie plate or baking dish. Chill at least 30 minutes.
3. Mix remaining ingredients, cook on low heat and whisk for 15-20 minutes. Do not boil. 4. Strain custard through a fine mesh strainer.
5. Cover and chill.
6. Pour custard over coconut crust
Optional: garnish with mint and fresh raspberries.
