A rich, classic cake. Top with fruit slices or berries for special occasions!
1 1/4 cups graham cracker crumbs
3/4 cup finely chopped nuts
1/4 cup sugar
1/3 cup butter, melted
4 (8 oz) packages cream cheese, softened
1 1/4 cups sugar
6 Packets True Lemon dissolved in 2 ½ tablespoons water
1 tablespoon Vanilla Extract
In a bowl, combine crumbs, nuts and sugar; stir in butter.
Press onto the bottom of a greased 10-inch springform pan; set aside.
In a mixing bowl, beat cream cheese and sugar until smooth.
Add eggs, beating on low speed just until combined.
Add True Lemon and vanilla; beat just until blended.
Pour into crust.
Bake 425, for 15 min., lower oven temp to 350, bake 60 min. Turn oven off and crack oven door, leave cake in oven 30 min. Cool on rack, then overnight in refrigerator. Decorate as desired. Let stand at room temperature for 30 minutes before slicing.
